Chickpea and Avocado Spread

A hearty vegetarian spread, perfect for sandwiches or snacking!

Serves: 2 - 3 servings
Ingredients
  • 1 15oz can Chickpeas/Garbanzo Beans, drained
  • 1 large or 2 small Avocados
  • 1½ - 2 tbsp Red Onion, finely diced (more or less to taste)
  • 1 tbsp Cilantro, finely chopped
  • 1 Lime, juiced
  • ½ - 1 tsp Sea Salt, (more or less to taste)
Instructions
  1. Drain chickpeas
  2. In a large bowl, mash chickpeas to desired consistency (I like my a little chunky)
  3. Add avocado(s), mash until blended with chickpeas
  4. Add diced red onion, cilantro, lime juice, stir to combine
  5. Add salt, start with ½ tsp and add more if desired
  6. Stir to combine
  7. Enjoy as a sandwich or as a dip
