Who doesn’t love chicken nuggets? Well these Almond Flour and Flaxseed Chicken Bites are sure to become a family favorite! These little babies are delicious and I’m not just saying that because I made up the recipe! In fact, I would encourage you to double this recipe, its not much more work and you may find yourself taste testing a few (dozen) after baking these.
“Free”dom
These Almond Flour and Flaxseed Chicken Bites are “breaded” in a gluten-free and grain-free coating of almond flour, ground flaxseed and grated Parmesan cheese (if you are dairy-free, feel free to leave the Parmesan out). I season them with a simply mixture of salt, pepper and garlic powder.
I like to bake them in my oven on a large cookie sheet. At 400 degrees they take about 25-30 minutes, flipping half-way through. Since the nuggets don’t have oil or egg involved, they aren’t quite as crispy as fried nuggets, but my house-hold doesn’t seem to mind. I promise they are delicious!
Fryer Fun
I have recently started playing around with the Air-Fryer. This handy-dandy kitchen gadget is super easy to use and helps make things crispy, with out a lot of oil. This method actually takes a little longer, because you have to make them in smaller batches. That being said, the results are quite good!
I still “fry” them at 400 degrees. I add as single layer of Almond Flour and Flaxseed Chicken Bites, spray lightly with cooking spray, and cook for 6 minutes. At the six minute mark, I rotate the nuggets and lightly spray again, then cook for 4-6 more minutes.
Tasty Bites
These bites are gluten-free and grain-free, but not taste free! They are delicious, easy and super healthy. Serve with your favorite dipping sauce and you’ve got yourself a snack, appetizer or dinner that is sure to please!

- 1 – 1½ lbs Chicken Tenders
- 1½ cup Almond Flour/Almond Meal
- ¼ cup Ground Flaxseed (Flaxseed Meal)
- ¼ cup Grated Parmesan Cheese (optional)
- 1 tsp Salt
- 1 tsp Black Pepper
- ½ tsp Garlic Powder
- Preheat oven to 425 degrees.
- Cut up chicken into cubes or leave in strips. Pat dry.
- Put all dry ingredients into al pie pan or large dish and blend together with a fork or whisk.
- Dredge chicken through the almond flour mixture. Then place on a greased baking sheet.
- Bake for 15 minutes, flip chicken, and than bake an additional 10/15 minutes. Chicken is done when it is white in the middle and juices are clear.
- Serve with favorite dipping sauce(s).
