Who here loves Taco Tuesday? If you said “Not me!”, I’m pretty sure we can’t be friends, J/K…but we may have to discuss this further 🙂 If you’ve spent any amount of time on my blog, you’ve probably noticed I love all things Mexican food related. This Healthy Turkey Taco Meat checks off my love for Mexican cooking and healthy food all at once! It’s easy, satisfying and no one will guess you’ve snuck a secret ingredient in!
Taco To Me…
Tacos are truly one of the most versatile foods. You put anything in a tortilla and I’m pretty on-board with eating it. No joke. We love traditional tacos, seafood tacos, tofu and even veggie tacos in this house, but Turkey Tacos are by far our family’s favorite. Ground turkey is fast cooking, healthy and it lends itself to almost any flavor you add.
As a parent, I’m always trying to figure out how to get more vegetables into my kids. This Healthy Turkey Taco Meat makes that a little easier. I add riced cauliflower to the ground turkey when cooking and no one is the wiser. This “superfood” adds fiber, B-vitamins and antioxidants, without adding any taste or flavor. That is a total win to me.
I start by heating a large pan over medium heat, adding oil when warm. Next, I add the ground turkey and frozen riced cauliflower (break apart and mix well). The great thing about the frozen cauliflower is it adds a bit of moisture to the turkey, preventing it from drying out. After a few minutes of cooking, I add my seasoning. I let everything cook together for approximately 5-8 minutes and viola…Healthy Turkey Taco Meat!

This recipe makes a large amount and I do that on purpose. A) I’m not joking when I say we love this recipe, it gets devoured here. B) Hello Meal-Prep! This Healthy Turkey Taco Meat is excellent as a leftover in lunches as a Taco Salad or Taco Bowl. It’s also requested as an “After School” Taco (yep that’s a real thing in our house). If you’d like, you can certainly cut the recipe in half, I’ll leave that up to you.
I will often eat this as a taco salad, but the Mr. and the boys love traditional corn and flour tacos. This Healthy Turkey Taco Meat is great with traditional toppings like lettuce, tomatoes, jalapeños, refried beans, cheese, etc. The sky’s the limit!

Healthy Turkey Taco Meat
Ingredients
- 2 lbs Ground Turkey
- 2 cups Frozen Riced Cauliflower
- 1 tbsp Cumin, ground
- 1 ½ tsp Salt
- 1 tsp Black Pepper, ground
- 1 tsp Garlic Powder
- 1 tsp Paprika (can use smoked if you'd like)
- 1 tsp Oregeno, dried
- 1-2 tbsp Extra Virgin Olive Oil
- 1 Lime
- Cilantro, for garnish
Instructions
- Heat large pan on Medium/medium-high
- Add Oil when pan is warm
- Saute Ground Turkey and Riced Cauliflower for 5 min, breaking up the cauliflower pieces
- Add all seasonings, mix well
- Saute meat mixture for 5-8 minutes, until all pink is gone and cooked through
- Taste Taco Meat, add more cumin or salt if so desired
- Squeeze Lime and mix together
- Garnish with Cilantro, if desired
- Enjoy now or use as meal prep all week!
